The legal basis for processing after the end of contact is a legitimate purpose in the form of archiving correspondence for the purpose of demonstrating its course in the future (Art. 6 para. 1 lit. f GDPR and Art. 9 para. 2 lit. f in the case of voluntary provision of sensitive data).
